Beef tongue, also known as ox tongue or neat's tongue, is a cut of beef that comes from, you guessed it, the cow's tongue. 

It's a muscular organ meat that's considered a delicacy in many parts of the world, especially in Southeast Asia and Central and South America. 

The surface of the tongue is slightly firmer, but gets peeled away after cooking, giving way to an incredibly tender, borderline creamy interior. The dense, almost spongy texture of the muscle absorbs spices and marinades beautifully, making it a versatile star in a variety of dishes.
