Beef, Eye Of Round Steak

Eye of round steak is a lean, boneless cut from the hind legs and rump of the cow. It's also known as breakfast steak, sandwich steak, or wafer steak. Eye of round is long and cylindrical, with some fat marbling. It's similar to a tenderloin, but less tender.

Because it's from an area that moves a lot (the leg and butt area), this cut tends to be muscle-y, and therefore chewier, than other steaks. But it's also this reason that makes it more affordable than other cuts of steak.
