It's also known as chuck under blade steak or chuck under blade center steak. Denver steak is similar to a New York strip and a ribeye, but it's often more affordable and has a more uniform thickness. It's also marbled with intramuscular fat and has a rich, beefy flavor.
Denver steak is best cooked over high heat on the grill, but you can also use a hot pan or cast iron skillet. For maximum tenderness, slice the steak across the grain. You can marinate the steak, but putting it straight on the grill with salt and pepper works well too. Denver steak is best served medium-rare and thinly sliced.
