Beef belly, also known as beef navel, is a fatty cut of beef from the underside of the cow, behind the front legs.
It's similar to pork belly, but larger and more flavorful. Beef belly is high in fat and lean meat, and is rippled with fat seams that render into golden ribbons when cooked correctly. It has a rich beefy flavor and unique marbling.
Beef belly is versatile and can be used for: Pastrami and beef bacon, Roasting, Smoking, Braising, and Slow-cooking stews.
